Dear diary,
Sometimes, i like to daydream about recipes but im just too lazy to cook... haha
Hence for the last few days i've been cooking for my own lunch.. these are my delicious creations:
1) french loaf + scrambled eggs + tomatoes ( I cooked this on monday 19/7/10)
first, i buttered the top of the french loaf and re-heat the bread in the microwave for 30 seconds. The butter melted instantly and the smell was so inviting.. yum yum.. Then i cracked 2 eggs and scrambled em (using a pan and spatula, obviously). Then i added in some tomatoes. When i'm done, i carefully laid em across my french loaf and voila!! my lunch is ready to be devoured.
2) CNY leftover glutinous cakes aka 年糕 (today's lunch)
Yes, u read this correctly, CNY LEFTOVERS. haha.. but the cakes were stored nicely in the freezer so yeah... My mom bought some purple sweet potatoes so i was inspired to fry the nian gaoS... First, i cracked an egg, pour some flour and mix em with some water. Making sure the mixture is not too watery nor too sticky, if not it would be hard to fry. Then i cut the sweet potatoes into slices and sandwich one thin slice of nian gao with sweet potatoes. (It looks like a weird sandwich hahaha). After that i dip the sweet-potato-nian-gao-sweet-potato sandwich into the mixture and put it gently onto the pan and watch it fried. I flipped it multiple times to ensure the sweet potatoes are soft. When it turns golden brown, i put it on a plate and ready to be served. mhmm hmm... Its best to eat when its crunchy on the outside but soft in the inside. The glutinuous rice cake just melted in my mouth.. uh-huh... (gosh.. this is really fattening for lunch.. but i only ate a few pieces ok? and drink lots of water... )
